Experiments concerned with new food products can provide unique challenges in their statistical design and analysis. Research in this area typically requires two stages. The first stage involves an experiment to compare alternative methods of preparation and their effects on the cooking and physical properties of the final products. In many studies, a second stage involves the use of taste or sensory panels (involving perhaps six to twelve people) to determine the acceptance of the food product by consumers. Both stages require appropriate designs, and the analysis should refelect the choices for those designs. In this paper, I will discuss relevant statistical ideas and illustrate them with examples from my consulting work.
